JAMAICAN JERK CHICKEN served with mashed potatoes and corn on the cob !

SUPER -MOIST and tasty chicken with super creamy mashed potatoes and a crunchy corn on the cob. super easy to make and quick!!

¼ cup canola oil¼ cup lime juice2 tbsps brown sugar1 tbsp apple cider vinegar1 tbsp dried thyme1 tbsp soy sauce2 tsp ground allspice4 cloves garlic4 habanero chiles, seeded, roughly chopped4 scallions, white and green parts, roughly chopped1 shallot, roughly chopped1 tsp ginger, freshly grated¼ tsp salt¼ tsp pepper4 large boneless, skinless chicken breasts (about 2 lbs total) method: Combine oil, lime juice, sugar, vinegar, thyme, soy sauce, allspice, garlic, habanero chiles, scallions, shallots, ginger, and salt and pepper in the bowl of a food processor and process until smooth. Place chicken in a large bowl, coat with the marinade, and let marinate in the refrigerator for at least 8 hours or overnight.
