datelicious coconut date balls (vegan)

We had a lot of left over dates from Ramadan (as you might know that Muslims break their fast with a date before they eat anything else). On the day of Eid I decided to use all the dates to make these delicious date balls loaded with pistachios and shredded coconut.



preparation: 15 min
serves: 20 balls

Ingredients:

3/4 cup pistachios
20 dates, pits removed
1 cup coconut, shredded, divided


Method:

Put pistachios in a food processor and pulsate for 10 seconds.
Add pitted dates. Process for a minute or until the mixture comes together and no big nuts or dates remain.
With a tablespoon scoop or a spoon scoop out 1 tablespoon of the mixture and roll in between hands to form a ball.
Put remaining shredded coconut in a bowl, and then roll the ball in the coconut. Place ball in a mini muffin liner and refrigerate for an hour and then serve.Store in refrigerator.
