Banana cake with pomegranate frosting

I know its been a while since I’ve posted on this blog but this cake is one of the best banana desserts 
out there! A moist and decadent cake with a delicious pomegranate frosting. 

Prep + bake time: 1 hour 25mins

Ingredients:

 Cake:

125g butter, softened 
3/4 cup(165g) firmly packed brown sugar 
2 eggs
1 1/2 cups (225g) self-raising flour (will be posting a self-raising flour recipe soon!)
1/2 teaspoon bicarbonate of soda
1 teaspoon mixed spice 
1 cup mashed banana
1/2 cup (120g) sour cream
1/4 cup (60ml) milk 

Pomegranate frosting:

1 teaspoon Milk
1 cup Powdered sugar/icing sugar 
2 tablespoons Pomegranates 
1 teaspoon softened butter 

Serves 10

Preheat oven to 180C/160C. Grease 15cm x 25cm loaf tin or any desired tin and line with parchment paper.
Beat butter and sugar in a small bowl with an electric mixer until it turns light and fluffy. Beat in eggs, one at a time, until combined.
Transfer mixture to large bowl. Using a spoon, stir in sifted dry ingredients, banana cream and milk. Then spread mixture into a baking tin and bake for about 50 mins. Then let the cake cool completely on a wire rack.
Make the pomegranate frosting stir all ingredients until combined over hot water. Make sure not to over heat, take it off the heat and use immediately.
